Homemade Horchata

The Challenge: To make homemade horchata

My Inspiration: It was Cinco de Mayo yesterday and I wanted to make a delicious Mexican treat that I have always loved, but have never made myself.

What I Need: 


  • 1 cup uncooked white long-grain rice
  • 5 cups water
  • 2 Cinnamon Sticks
  • 1 cup Sweetened Vanilla Almond Milk
  • 1/2 tablespoon vanilla extract
  • 1/2 tablespoon ground cinnamon
  • 1/2 cup white sugar

Additional Needs

  • The forethought to make this recipe at least 3 hours in advance of wanting to drink it.
  • Blender
  • Strainer
  • Pitcher
  • Spoon (1 large, several measuring)

Who is Helping Me:  I found this recipe and method on All Recipes and like every person who has ever used an All Recipes recipe, I modified it.

Who is NOT Helping Me: Put this one down in the history books, but I didn’t have any frustrations executing this challenge! There isn’t too much to screw up when there’s really only 2 major steps to this challenge.

How I Did It:

  1.  Place rice and 5 cups of water into a blender and blend for about 1 minute until the rice is broken up giphy.gif
  2. Add two whole cinnamon sticks and let the mixture sit in the fridge for 28 hours (that’s what I did.. but it’s recommended that you let it sit for at least 3 hours)
  3. Pour the mixer through a fine strainer into a pitcher and discard the leftover rice and the cinnamon sticks.
  4. Add almond milk*, vanilla, ground cinnamon and sugar** to the pitcher and stir well.
  5. Pour over ice and enjoy.

*I used almond milk because I wanted to keep the horchata dairy free because milk makes me gassy. TMI, I know. I have regrets about this and I will share them below.

**The original recipe calls for 2/3 cup of sugar but because I used sweetened almond milk, I cut the sugar down to avoid the mix from becoming too sweet.

Final Thoughts/Would I Do it Again?: Yes! In regards to procedure, it was super easy to make. In regards to taste, the only thing I would change is that I would use 2% or whole milk instead of almond milk. I wished the drink was just a little creamier. It tasted too watery to me and since almond milk is very watery and I was adding watery milk to water, I figured the almond milk was to blame. Water + Water = Water.

Also, if you’re not a huge fan of floaty things in your drink, I’d cut back on how much cinnamon you put in the final mixture. The cinnamon did not incorporate homogeneously throughout the drink and so it ended up just floating on top. It’s not a huge deal, but something to consider.
